SPA: Orange Crumb Chicken

It is so hard for us to come up with healthy dinner options that are sweet pea-approved, and this has definitely proven to be one of them! The four of us LOVE this delicious, flavorful chicken! I found the original recipe in a Weight Watchers cookbook.



Orange Crumb Chicken

2 T. Orange Juice (I juice the orange that I use for zest)
2 T. Dijon Mustard
1/4 t. Salt
3/4 cup Crackers, Whole-wheat (I use WW Ritz)
1 T. Orange Zest
1 T. Shallots (I typically use white/yellow onion)
1/4 t. Ground Black Pepper
1 lb boneless, skinless chicken breasts (original recipe calls for thighs)

1. Preheat the oven to 350. Prepare a 9x13 baking dish with cooking spray.

2. Combine orange juice, mustard, and salt in a bowl. Combine cracker crumbs, orange zest, shallot/onion, and pepper on a sheet of wax paper.

3. Brush both sides of the chicken with the mustard mixture and then dredge in the crumb mixture, pressing firmly to coat both sides. Place chicken in the baking dish.

4. Bake 15 minutes, turn over, and bake 15-20 minutes longer until cooked through.




We typically pair the chicken with some brown rice and a veggie...
