I made some muffins for a play date the girls and I will be going to, and they turned out really yummy, so I thought I would share. The recipe is from the "healthy" section of 1 Mix, 100 Muffins. I'm not sure how healthy they really are, but they sure are tasty!
Oat & Cranberry Muffins
1 cup all-purpose flour
1 T. baking powder
heaping 1/2 cup firmly packed dark brown sugar
scant 2 cups rolled oats
3/4 cup craisins
2 large eggs
1 cup buttermilk
6 T. sunflower oil
1 t. vanilla extract
1. Preheat oven to 400. Grease or line a 12-cup muffin pan (we used a mini muffin pan and a regular muffin pan). Sift together flour and baking powder. Stir in sugar, oats, and craisins.
2. Lightly beat the eggs, then beat in buttermilk, oil, and vanilla. Make a well in the center of the dry ingredients and pour int he beaten liquid ingredients. Stir gently until just combined, do not over mix. (Not going to lie... we used the Kitchen Aid mixer and tried not to over mix. Turned out great!)
3. Spoon batter into pans and bake for 20 minutes until well risen, golden brown, and firm to touch (We baked the minis for 12 minutes).
4. Let cool for 5 minutes and serve.
So, the minis will come with me to the play date and the larger muffins will serve as breakfast for Tyler and his workmates. Voila!

Those muffins look really good, and easy to make! I may have to try them, Ethan is into things that come in a muffin liners. Go figure! :)
